Meal Planning Monday - Week 14

Happy Monday! I hope that everyone had a good weekend! It seemed like the weekend was pretty low-key, but I'm realizing that I guess we actually did a little bit. Saturday we went to Hubster's class BBQ. I met a few other spouses there and there was a little girl who was a day younger than V. Yesterday, I had the amazing opportunity of meeting Bobbi, a fellow military wife that I met on Twitter. She's here for her husband's AIT graduation.

I have to admit. Both events would normally cause me to have social anxiety, but for some reason, I had no worries. Yay for not being crazy!

Like usual, I took a little bit of time on Sunday to work out my meal plan for the week and get a shopping list made. This week's shopping list is kind of small. It worries me, in that I feel like I'm forgetting something. Hopefully not and we can just keep the expenses to a minimum this week.

Speaking of expenses, we STILL haven't received our insurance money. It's been over a month already. Come on USAA!

And, now on to the meal planning part.


Week 14 Menu:
Monday: Sweet Hawaiian Crockpot Chicken and Fried Rice
Tuesday: Cuban Imperial Rice
Wednesday: Picadillo with black beans and rice
Thursday:  Chicken, Broccoli and Mac & Cheese Casserole
Friday: Chicken Cordon Bleu
Saturday: Baked Ziti
Sunday: Spanish Meatballs

  2. Mmm ... I haven't had a good chicken cordon bleu in a long time! That sounds delicious.
    Oh and insurance claims ... especially for homes is a bitch to get paid timely! Good luck!
