Happy Easter!

Happy Easter, friends! Since I have a bit of time before the eggs start boiling, I figured I'd post about what we're doing today.

We took the girls to Mass this morning, and it wasn't nearly as traumatic as I though it would be. The families sitting around us kept commenting on how well they were behaving. I didn't think that was the case, but I'm more concerned about others being disturbed, so that's really all that matters.

I left the baked French Toast cooking in a roaster on top of the stove while we were at church. When we got home, it was perfectly ready. So delicious!! I actually cut out a tad bit of sugar and it was still sweet enough.

After breakfast we let the girls hunt for eggs in the front yard. Veronica was a little speed demon! We had to tell her to slow down, so that the baby would have a chance to get some. The baby was mostly interested in the candy, so she'd grab the eggs, empty them, and drop them. Smart girl!

We have some friends coming over later his evening, so we're cleaning up and cooking right now. I've been planning (and stressing) like crazy to make sure that everything is perfect. Hubs keeps reminding me that it's just our old friends who we always have dinner with anyway, so it's not a huge deal, which is completely true.

The first thing I'm going to do is make the deviled eggs, since they're relatively easy. Want to know the key to preventing the egg shells from cracking? Slowly raising the heat and a bit of salt in the water.

We did a lot of the prep work last night, which is going to make the actual cooking part much easier today.

On our plates tonight, we'll have:
Spinach Salad
Rack of Lamb with Balsamic Dressing
Bacon-wrapped Asperagus
Potatoes au Gratin
Strawberry Shortcake Trifle
